This afternoon, I decided to use two slow cookers. One for the scalloped potatoes, and the other for the main course of pork with green curry. And as they are wont to do, the little ones were squealing for something yummy BEFORE dinner.
Alright, I thought … we are going to create something for the Vitamix that is going to be satisfactory for all intensive purposes, on all levels. So we did … and the smoothie that was birthed from the blender was magnificent!
It passed the test for all three of them, and I was simply in heaven.
Here is the recipe:
- 1 large organic carrot
- 2 organic apples
- 1 – 1 inch slice ginger root (peeled)
- handful organic dandelion leaves (stems removed)
- handful organic parsley
- 1 tbsp chia seeds
- 1 cup apple juice
- 1 cup water
- 6 ice cubes
- 1 scoop vanilla protein powder
Combine all ingredients into the Vitamix, and turn it on to variable speed for about one minute, at speed level 3. Then turn blender onto High for another minute or two, until desired consistency is reached. Enjoy!
